Chicken Salad Pita

 
Here is an awesome recipe to try for an easy lunch!  I make 4 batches at the beginning of the week and eat it 4 times a week for lunch!  So easy that way and so delicious!!
 
Ingredients
  • 3 ounces chicken breast, boneless, skinless, cooked
  • 1 1/4 tablespoons mayonnaise, low-fat
  • 1 tablespoon celery, fresh, diced
  • 1/2 low carb pita pocket
  • 4 fluid ounces apple juice, unsweetened

Preparation
  • Cut up chicken and mix with mayonnaise and celery until thoroughly combined.
  • Spoon chicken salad into pita half.
  • Enjoy with a small glass of apple juice.
