Chicken Salad Pita

 
Here is an awesome recipe to try for an easy lunch!  I make 4 batches at the beginning of the week and eat it 4 times a week for lunch!  So easy that way and so delicious!!
 
Ingredients
  • 3 ounces chicken breast, boneless, skinless, cooked
  • 1 1/4 tablespoons mayonnaise, low-fat
  • 1 tablespoon celery, fresh, diced
  • 1/2 low carb pita pocket
  • 4 fluid ounces apple juice, unsweetened

Preparation
  • Cut up chicken and mix with mayonnaise and celery until thoroughly combined.
  • Spoon chicken salad into pita half.
  • Enjoy with a small glass of apple juice.

Baked Eggs


Here is an awesome way to cook eggs! It is SUPER easy and WAY yummy!

Bake 6-12 eggs in muffin tin for 20-25 minutes!

I bake them and keep them in the fridge for easy breakfasts or snacks. Eat them cold or heat in the microwave for 15-30 seconds!

Give then a try...you'll love them!

My mom is cooler then yours ;)

Okay, this if for anyone who thinks that they are too old or out of shape to do these workout programs or get in shape!  I have to give a shout out to my awesome mom, she started doing P90x3 as part of a Challenge Group last week and she is doing SO awesome! Don't get me wrong my mom has always been in good shape for her age, but she is almost 60 years old so she wasn't sure she could do these workouts!  Well she had nothing to worry about, she is doing them and doing awesome!

She has already lost 6 lbs in a week and is doing AMAZING!

She just proves that it doesn't matter what your age or if you don't think you can do this...you can get in the best shape of your life! She is such a wonderful example to me and so many!!

An easy snack your kids will love!

Here is another delicious snack!  I love this one because it is another SUPER EASY snack and because my son loves it too!  If you are anything like me then there is nothing better then a snack that is easy and my little boy likes! So whether for you or for your kiddos try this yummy snack!  

1oz Roast Beef
1oz Cheddar Cheese
4 Wheat Crackers

SO EXCITED to post that we are having great success in my Challenge group that started on Jan. 6!  I mean look at this guy!! Besides feeling awesome, having more energy and being more alert he has already lost 9.5 lbs!!!  This proves that if you are dedicated to making a change this WILL WORK!!!

Healthy Clean Eating Dinner Recipe



I wanted to share a delicious dinner recipe we had for dinner today! I hope you enjoy it as much as we did!


Herbed Turkey Cutlet

Ingredients

  • 1 tablespoon liquid-egg substitute
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon all-purpose flour
  • 1/2 teaspoon sage, ground
  • 1/2 teaspoon rosemary, dried
  • 4 1/2 ounces turkey cutlet, raw
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons low-fat sour cream
Preparation
  • Preheat oven to 350°F. Lightly coat a shallow baking pan or sheet with cooking spray.
  • Mix together egg substitute and 1/2 tsp. of the mustard. In a separate bowl, mix the flour, sage, and rosemary.
  • Dredge turkey cutlet first in the egg substitute mixture, then in the flour mixture to coat evenly. Drizzle with olive oil.
  • Bake for 10 to 15 minutes, or until turkey is cooked through.
  • Combine sour cream and remaining 1/2 tsp. of mustard. Drizzle sour cream mixture over the cooked turkey to serve, or use as a dipping sauce.
Broccoli 
Ingredients
  • 4 broccoli spears, raw
  • 1/2 teaspoon spread, buttery, low-fat
Preparation
  • Steam broccoli on stove or in microwave until crisp tender.
  • Top with melted spread.

Quick & Easy Couscous
Ingredients
  • 2/3 cup couscous, cooked
  • 3/4 teaspoon extra virgin olive oil
  • 1/2 teaspoon parsley, fresh, chopped
Preparation
  • Prepare couscous per package directions, Portion out 2/3 cup.
  • Drizzle with olive oil and parsley.

WHY!?!

So here is a little advice!  I was talking to my sister and mom last night.  They are both on this P90x3 plan with me and they were having a rough day yesterday.  The diet and workouts were catching up with them, so they came to me and said what do we do.  Here is what I shared with them, it is what I have learned in my time as a coach...  

You need to find your WHY!  

Why are you doing this diet and workout?  Why do you want to start a new diet and workout?  What is motivating you?  For all of us it is usually something bigger then we realize.  

I wanted to become a coach because I wanted to help people love fitness as much as I do.  I want to help people to achieve their goals, but I also want to help people realize their WHY!  I want to help them to not only reach their goals but make a lifestyle change and overcome whatever is holding them back.  

I made my mom and sister think about what their WHY was and told them to focus on that!  You need a bigger picture then just working out and dieting to help you get through the hard days!  So focus on your why, go write it down and mount it somewhere so you see it every day!  I promise it will help you get through the days when you want to grab the gallon of ice cream sit on your couch and give up!

The Challenge






The Challenge = Push-ups and Pull-ups!!








Well let's just say that I don't do pull-ups and push-ups very well....AT ALL!  "The Challenge" in the P90x3 workout today was just that a Challenge!  It was all pull-ups and push-ups or 30 minutes which sounds undo-able but if you modify it like we had to then it is do-able and a great workout!  It was crazy but it was still fun!  I can't wait for us to get better and better each week!  Can't wait to see improvement!

My hubby of course was better then I was at this workout but this girl is going to start to represent soon!!  But for now it is fun to have such a stud for a hubby!  He loved this workout unlike some of the others (he's not a big yoga fan) but today he said it felt so good to do pull-ups and push-ups just like in the good old football days!  

No go get you push-ups and pull-ups on!  Even 10 of each is a start!!

Well, I have to admit that today was one of those days that I had so much going on that I didn't get my workout in :(  I decided to take my little boy to Disneyland this afternoon (we have annual passes since we live close) since I have been spending so much time with Beachbody Coaching stuff lately.  It was nice to have some fun time with friends and my little guy!  I love being a mommy to such a special little boy!  It was one of those days that you realize that if you miss a workout it's not the end of the world!  You just need to get back at it the next day and make up for it!  It is so nice to have my Challenge Group to help keep me accountable so that when I miss a day I realize that I need to get back at it the next day, after all you don't want to disappoint the others that are working so hard too!

Day 1 of P90x3...oh my I'm going to hurt tomorrow!!

Day 1 of P90x3 is done!!  I must say it is definitely going to challenge me!  

Here is my advice after the first night:  DON'T stress if you can't do MOST of the workout, focus on getting the technique down and do the best that you can.  If you try to do EVERYTHING that the totally fit people on the video do you will probably get pretty discouraged!  So just do what you can do even if it is one of everything and it will get better I PROMISE!!

The Countdown to P90x3


The countdown is on...1 day until the big day!  Starting the new P90x3 program tomorrow.  I am having a challenge group with my mom, sister and hubby!  I figured who better to help change their lives then those that I love the most!
