Healthy Clean Eating Dinner Recipe



I wanted to share a delicious dinner recipe we had for dinner today! I hope you enjoy it as much as we did!


Herbed Turkey Cutlet

Ingredients

  • 1 tablespoon liquid-egg substitute
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon all-purpose flour
  • 1/2 teaspoon sage, ground
  • 1/2 teaspoon rosemary, dried
  • 4 1/2 ounces turkey cutlet, raw
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons low-fat sour cream
Preparation
  • Preheat oven to 350°F. Lightly coat a shallow baking pan or sheet with cooking spray.
  • Mix together egg substitute and 1/2 tsp. of the mustard. In a separate bowl, mix the flour, sage, and rosemary.
  • Dredge turkey cutlet first in the egg substitute mixture, then in the flour mixture to coat evenly. Drizzle with olive oil.
  • Bake for 10 to 15 minutes, or until turkey is cooked through.
  • Combine sour cream and remaining 1/2 tsp. of mustard. Drizzle sour cream mixture over the cooked turkey to serve, or use as a dipping sauce.
Broccoli 
Ingredients
  • 4 broccoli spears, raw
  • 1/2 teaspoon spread, buttery, low-fat
Preparation
  • Steam broccoli on stove or in microwave until crisp tender.
  • Top with melted spread.

Quick & Easy Couscous
Ingredients
  • 2/3 cup couscous, cooked
  • 3/4 teaspoon extra virgin olive oil
  • 1/2 teaspoon parsley, fresh, chopped
Preparation
  • Prepare couscous per package directions, Portion out 2/3 cup.
  • Drizzle with olive oil and parsley.
